King Cake, Round II



After my last rant, co-worker Bianca swore she'd be bringing in a tasty king cake on Fat Tuesday.


And so she did.

Bianca, who writes the food blog Vegan Crunk, made this vegan king cake based on a recipe from Kittee Kake.

The cake is dense, cinnamon-rich, and specked with pecans. There's no cream-cheese filling, and because it's freshly baked there's no congealed icing either.

Another difference, Bianca went traditional and used a bean instead of a plastic baby.
