My coworker Bianca Phillips and I were recently invited, along with some other foodies, to sample some of Ashley Dunn’s Cosmic Coconut menu items. The all-vegan, organic treats were delicious, and I can’t wait to check out the new smoothie/juice bar when it opens next month.
We started off with shots of wheatgrass.
It’s a surprisingly sweet juice, although the byproduct is less than appetizing.

Ashley followed up with some beet, apple, ginger, chard juice. (The ginger was the star of the concoction.)
We sampled some cucumber apple juice, which struck us all as the perfect summer drink.
We tried goji berry smoothies and the signature Cosmic Coconut, made with coconut milk, coconut meat, frozen bananas, and pineapple. It was delicious, and could only be made better with a splash of coconut rum…
Ashley also whipped us up some vegan snacks: Guacamole and vegetables, incredibly rich and authentic raw chocolate pudding (made with avocados), her signature “Coconutties” made with nuts, coconut, cacao powder, and cocoa.
