I met James Stephens, owner of Extreme BBQ Trailers, at the Boss Pit tent during Wednesday's Family & Friends night at Barbecue Fest.
James hooked up with Boss Pit just a few weeks ago nearby this very spot on Tiger Lane. Both were tailgating during the Blue-Gray game.
Smart move for both parties, I say. Boss Pit has a veteran crew that traces its fest lineage back around the days of the Orpheum parking lot, and James brings to the table his trailer that has a rotisserie capable of cooking 300 pounds of meat.
One of the trailer's features I like the best is the air conditioning. A rig like this will set you back around $43,000.
I asked James about his background and what sort of schooling prepared him for this gig.
"I've got a PhD in barbecue," he says.
James says he likes the location change from the Tom Lee to the Fairgrounds.
“It’s more convenient and a lot easier to get in and out,” he says. “They can have it here every year.”
James and Boss Pit members have talked about donating leftover barbecue to flood victims once the fest is over.
“They deserve a hot meal," he says.
